Instructions
  1. Heat a frypan with olive oil and add in onion and garlic. Cook for a few minutes until onion is softened. Add in curry powder, turmeric and chilli flakes and cook for 1 minute.
  2. Add in the tofu and coat with the spices. Add in the chopped vegetables (except the kale) and stir.
  3. Add in coconut milk, cup of stock and mix. Bring to a simmer and cover with a lid to cook for 10-15 minutes until the pumpkin is tender. Once pumpkin is tender, add in the kale.
  4. Season well and serve as is or with rice or cauliflower rice.
