  1. Heat a large frying pan with olive oil, add in the onion and garlic and cook for 5 minutes until browned and softened.
  2. Add in the curry powder and turmeric and cook for 2 minutes until fragrant.
  3. Add in the zucchini and mushrooms and coat with the spices. Add in the chopped tempeh, tin of chickpeas and coconut milk and bring to a simmer for 10 minutes until the veggies are tender.
  4. Finally, add in the spinach and mix until wilted through. Season with salt and pepper and serve into bowls.
  5. To finish, drizzle with some tahini.
