  1. Preheat oven to 180C and line a tray with baking paper.
  2. In a saucepan, boil eggs for 2-3 minutes, until cooked to your liking.
  3. On the baking tray, lay out the pumpkin and broccoli and drizzle over 1 tablespoon of olive oil and salt. Bake for 20 minutes, until pumpkin is tender.
  4. To prepare kale, chop and massage with olive oil.
  5. Make the dressing by combining all ingredients well in a small bowl.
  6. Assemble bowls by laying down the bed of kale, then adding baked pumpkin and broccoli, carrot, cherry tomatoes, avocado and pumpkin seeds. Finish by drizzling over the dressing.
