In a saucepan combine the strawberries and honey and cook on low, simmering until strawberries have softened.
Mash with a fork, you can leave some chunks, chunky jam is the ‘jam’.
Stir in chia seeds and allow to cool fully before putting the jam into a airtight container in the fridge. Store for up to 1 week.
