I came across this originally in one of Pete Evan’s earlier Paleo cookbooks and have modified it over the years. When I start to feel under the weather it will always be one of the first meals I prepare! It helps me bounce back in no time.
spicy egg mince
Heat a frypan over a medium high heat. Add ½ coconut oil and once melted add the garlic, onion and chilli. Sauté for 1-2 minutes, or until softened.
Add the beef mince and stir-fry until browned.
Add the broth, fish sauce, tamari, honey and Chinese five spice as well as the spinach and simmer for 3-4 minutes. Add basil, season well and set aside.
Add remaining coconut oil to the frypan, and once melted add the zucchini and carrot noodles. Sauté for 2-3 minutes. Divide the vegie noodles amongst two bowls and top with spicy mince mixture.
Before serving, crack each egg into the fry pan, and fry until cooked to your liking. Once cooked, place on top of the bowls, season further if required and enjoy.
