Instructions
  1.  Bring a saucepan of water to the boil and add a dash of oil and a pinch of salt. Add in the rice. Cook the rice until tender, strain and rinse. Cook the rice whilst you are cooking the chicken so that by the time the rice is finished the chicken will nearly be done. 
  2. While the rice is cooking, prepare the stir fry but cutting up all the vegetables.
  3. Heat oil in a large frying pan and add in the garlic, chillis and onion, cooking for 2-3 minutes until softened.
  4. Add in the chicken and cook for 5 minutes until browned. Add in the mushrooms, cauliflower, carrots and green beans and stir to combine well.
  5. Add all of the sauce ingredients into a bowl and mix well. Pour the sauce over the vegetables and cover with a lid. Cook for another 10-15 minutes, until the chicken is cooked and vegetables are tender.
  6. Serve the chicken stir fry on a bed of rice and season with salt and pepper.
