Instructions
  1. In a frypan, heat oil over medium heat, add in chicken pieces and cook for 5 minutes until browned. Next, add in paprika and add in chopped brussel sprouts and asparagus and cook, covered, for a further 10 minutes until chicken is cooked through and vegetables are tender.
  2. Remove chicken and vegetables from the pan and add in the haloumi, cook for 1-2 minutes each side until golden and then remove from pan and place into a bowl with the chicken and veg mixture.
  3. In the same bowl, add the chopped mango, cucumber and cherry tomatoes - mix carefully and season well with salt and pepper.
  4. In a separate dish, make the dressing and drizzle it over the chicken and salad mix.
  5. Portion up the fresh spinach into 4 bowls and top with the chicken and salad mix.
