Instructions
  1. To make Mince & Vegie Filling, heat olive oil in a large frypan and add in the onion and garlic.
  2. Add in beef mince and cook until browned. Next, add in the zucchini, carrot, spinach, passata, mixed herbs, chilli and sea salt and cook until the spinach is wilted and mixture is well combined.
  3. To make cheese sauce: Add broth, butter and tapioca flour to a saucepan and cook over medium heat, until tapioca flour has dissolved. Continue stirring and bring the mixture to the boil and then remove from heat, it should be quite thick. Add in the yeast flakes, onion, garlic and sea salt. Whisk well, then add the almond meal. Bring back to the heat for 2 minutes.
  4. In a large baking dish, place 1/3 of the Mince & Vegie Filling at the bottom and spread it out. Top with one layer of the lasagne sheets, then add 1/3 of the cheese sauce, continue this twice more, so you end up with three layers. The final layer should be the cheese sauce.
  5. Finish it off by sprinkling two big handfuls of parmesan over the top and season with salt and pepper. Place the tray into the oven and bake for 20 minutes, until cheese is melted and top is golden.
