Instructions
  1. Preheat oven to 180°C and line a lamington tin with baking paper. 
  2. In a blender, place the beans, eggs, coconut oil, maple syrup/honey and vanilla. Blend until well combined. 
  3. Pour mixture into a large bowl and add the coconut flour, almond meal and baking powder. Mix with a spoon until well combined. Finally, add in the coconut cream and stir again.
  4. Pour into a prepared lamington tin and bake for 25-30 minutes. Allow to cool in the pan before removing. Once cooled, remove the slice from the tin and cut into 9 rectangle pieces. 
  5. To make the chocolate icing, place chocolate and coconut cream into a small saucepan over medium heat. Stir consistently for 5 minutes, or until the chocolate is fully melted. 
  6. Allow the chocolate to cool slightly for 5 minutes, then dip all four sides of the sliced pieces of cake into the sauce (ensuring they aren’t soaked, but lightly coated) then roll immediately in the shredded coconut. Place lamingtons onto a plate or tray lined with grease proof paper and place in the fridge until they are ready to be served. 
  7. The lamingtons can be kept in the fridge in an airtight container for up to 5 days.
