These make for a terrific weeknight meal. It’s up to you as to how you serve these and what with. We love ours in cos lettuce cups or gluten free wraps; the family loves theirs in tortillas with grated cheese and a little sour cream. A great meal to involve the family in.

Instructions
  1. Preheat the oven to 180°C and line a baking tray with baking paper.
  2. In a large bowl add olive oil, salt, paprika, cumin and chilli flakes. Stir to combine. Add remaining ingredients and toss to combine before transferring to the baking tray and baking for 20 minutes, turning at the 10-minute mark.
  3. Whilst the chicken is cooking, heat a BBQ grill and add corn, turning until charcoaled. Allow to cool before cutting kernals away.
  4. To a large bowl, add corn kernals, tomato, avocado and coriander. Season well and squeeze lemon over the top and toss gently to combine.
  5. Serve chicken mixture in lettuce cups or wraps, top with salsa and anything else which takes your fancy!! Be as adventurous as your taste buds dare!
