  1. Preheat oven to 180 and line a rectangle frittata tray with baking paper. In a bowl, toss together the melted coconut oil with the chopped sweet potato, making sure it's coated well.
  2. Lay out the sweet potato at the base of the tray and place in the oven for 20-30 minutes, until it's tender.
  3. In a small frypan, cook bacon and set aside to cool.
  4. In a bowl, crack eggs and whisk together with the milk. Add in grated zucchini, parsley, chilli and cooked bacon. Season with salt and pepper.
  5. Pour egg mixture over the cooked sweet potato and then top the frittata with feta. Place in the oven and cook for 20-30 minutes, until the frittata is no longer wobbly/wet in the middle.

  • So easy and yum! I was lazy and just roasted the zucchini and bacon along with a few other veggies I had on hand. Delicious!
