  1. Preheat your oven or BBQ to 200C and prepare a deep baking tin or disposable aluminium tray to place your chicken in.
  2. Prepare the onions, carrots & celery sticks by roughly chopping. To prepare the garlic, simply pull apart the individual cloves, but don’t worry about peeling the skin off. For the lemon, simply cut into quarters.
  3. Place all the vegetables (except the herbs) into the baking tray and drizzle generously with olive oil. Next, place the chicken on top, season with salt and pepper, drizzle with olive oil, then rub it into the skin. This will make it nice and crispy!
  4. Place the tray into the oven and cook for approximately 1.5 hours. Depending on the size of your chicken it may take more time. To check if it’s cooked, slice down the breast part of the chook to see if the juices run clear.
