Instructions
  1. Preheat oven to 180°C and line a loaf or a square tin with baking paper. 
  2. In a food processor or blender, pulse the oats, pumpkin and sunflower seeds together and set aside.  
  3. In a large saucepan, combine the butter, honey and tahini and heat on low until butter has melted and ingredients are well combined. 
  4. In a separate bowl mash banana and whisk in the egg. 

  5. Remove the saucepan from the heat and add the blended oat and seed mixture, coconut, chia seeds, banana and egg mixture, dates & cinnamon. Combine well. 
  6. Scoop mixture into the prepare tray and lightly pat down. Transfer to the oven and bake for 25-30 minutes until golden brown. Allow to cool completely, then place in the fridge before slicing.
